Life Effige: mapping of the environmental impact of school catering

Camst group’s participation in the European Life Effige project enabled it to try out the PEF “Product Environmental Footprint” method, promoted by the European Commission, which aims to enable effective, transparent measurement of an organisation’s environmental footprint.

Life Effige The project was promoted by the Institute of Management of the Scuola Superiore Sant’Anna University, Pisa, which served as project leader and technical partner together with Enea, the National Agency for New Technologies, Energy and Sustainable Economic Development. Camst was the first catering company in Europe to run this pilot trial, which calculated the environmental impact of a school catering service in all its phases, from the choice of raw materials to their processing and from the definition of menus to the production of dishes and their distribution in school canteens. The study’s processing by Enea, with the technical support of its spin-off Ecoinnovazione, enabled measurement of the “Product Environmental Footprint” for a specific category of product, i.e. a school meal produced and delivered by a Camst cooking centre. The project also involved three of Camst’s raw material vendors representing the school catering supply chain, recognising the fundamental importance of engaging with the food production supply chain to encourage sustainable development through partnership.
