Control, our ever-present ingredient.

Quality is achieved through constant control, which we have entrusted to a specific in-house structure. As well as managing the monitoring and continual improvement of the entire system, its expert staff provide technical and scientific advice on food quality and hygiene to all corporate functions.

We believe that quality means on the one hand offering a service that meets the customer’s demands and needs, while on the other precisely measuring their degree of satisfaction. The data produced are valuable ingredients for regular assessment of the fitness for purpose of the management system (quality, food safety and traceability) and are also notified to the top management and the certifying body in order to improve the operating and quality level of the Camst catering offering.

Quality and food hygiene specialists

For the monitoring and optimisation of our entire system (ISO 9001, ISO 22000 and ISO 22005) we have created a special team of 15 qualified technical experts who provide technical and scientific advice on food quality and hygiene to all corporate functions and Group companies. Every year, the integrated Systems and Sustainability Manager issues an audit plan, submitted to the top management for its approval. The plan is then shared with the internal auditors who schedule the audits. As required by the integrated management system, audits are unannounced in order to ensure greater effectiveness in verifying the level of knowledge and awareness of the requirements on the part of operational staff.

The Operation department, which operates under the Contract Catering Operations Management, is responsible for integrating policies, objectives and communication between the head office and production sites, in order to improve the quality of service and product (raw materials, recipes and menus) in the contract catering sector.

Strict control of raw material quality

The continual improvement of our catering service implies quality control of the raw materials used to prepare meals and selection and monitoring of the supply chain. Controls are carried out through checks on reception of goods and throughout the production process. Monitoring is also conducted through the self-control plan adopted at Camst sites. Sampling of raw materials takes place at the catering sites and distribution centre, together with sampling of finished products and the collection of environmental swabs.

More than 900 inspections were performed by internal and external bodies and third parties in 2023.
